Gourmet Brownie Cookies

Delicious brownie cookies that combine fudgy brownie texture with cookie sweetness.

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the unsalted butter in a medium saucepan over low heat and let cool.
  3. Combine the granulated sugar and brown sugar in a mixing bowl, then whisk in the melted butter.
  4. Add the eggs one at a time, whisking well after each addition, and then add the vanilla extract.
  5. Mix the flour, cocoa powder, baking powder, and salt in another bowl, then gradually stir them into the wet mixture.
  6. Fold in the chocolate chips until evenly distributed.
  7. Scoop heaping spoonfuls of dough onto a baking sheet lined with parchment paper, spaced about 2 inches apart.
  8. Bake for 10-12 minutes until edges are set, and centers look slightly underbaked.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.
