Gourmet Brownie Cookies

  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the unsalted butter in a medium bowl.
  3. Mix in the granulated sugar and then add the eggs and vanilla extract.
  4. Sift together the cocoa powder, flour, salt, and baking powder in another bowl.
  5. Combine the dry ingredients with the wet mixture, stirring gently.
  6. Fold in the chocolate chips, if using.
  7. Scoop heaping spoonfuls of batter onto a parchment-lined baking sheet.
  8. Bake for 10-12 minutes, or until edges are set.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

For a vegan option, use flax eggs. Feel free to customize with nuts, mint extract, or dried fruit.
