  • 3/4 cup gluten-free flour blend (or almond/rice flour as substitutes)
  • 2 large eggs, beaten
  • Vegetable oil for frying (about 2 cups)
  • 3/4 cup freshly squeezed orange juice
  • 1 tablespoon orange zest
  • 3 tablespoons gluten-free soy sauce
  • 2 tablespoons honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 tablespoon cornstarch or tapioca starch (for thickening)
  • 2 tablespoons water (for cornstarch slurry)

Instructions

  1. Prep the chicken: Cut chicken into bite-sized pieces and salt lightly.
  2. Breading setup: In one bowl, add gluten-free flour blend. In a separate bowl, beat eggs.
  3. Coat your chicken: Dip chicken in flour, then eggs, and back to flour for a second coating.
  4. Heat your oil: Pour vegetable oil into a large skillet and heat over medium-high heat.
  5. Fry the chicken: Cook breaded chicken pieces for 4-5 minutes until golden brown, then drain on paper towels.
  6. Make the sauce: Sauté minced garlic and ginger, then add orange juice, soy sauce, honey, and orange zest.
  7. Thicken up: Create a cornstarch slurry and stir it into the sauce until thickened.
  8. Combine chicken and sauce: Toss fried chicken in the sauce and cook together for an additional minute.
  9. Taste and adjust seasonings as desired before serving.

Notes

For a twist, add fresh pineapple chunks or use crispy cauliflower instead of chicken. Serve over rice or noodles.
