  • 1 lb steak (sirloin or ribeye)
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup beef broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Boil Water: Bring a large pot of salted water to a rolling boil.
  2. Add Tortellini: Once boiling, add the tortellini and cook according to the package instructions (usually about 2-4 minutes for fresh tortellini).
  3. Drain and Set Aside: Once cooked, drain the tortellini and toss them lightly with a splash of olive oil to prevent sticking. Set aside while we work on that creamy sauce.
  4. Heat the Olive Oil: In a large skillet over medium-high heat, heat the olive oil until shimmering.
  5. Season the Steak: Season your bite-sized steak pieces generously with salt and pepper.
  6. Sear the Steak: Add the steak pieces to the hot skillet in a single layer. Don’t overcrowd the pan; it’s better to work in batches if needed. Sear for about 2-3 minutes on each side, or until browned and cooked to your liking.
  7. Remove the Steak: Once cooked, remove the steak from the skillet and set aside.
  8. Sauté Garlic: In the same skillet, reduce the heat to medium. Add the minced garlic and sauté for about 1 minute, or until fragrant.
  9. Add Broth and Cream: Pour in the beef broth and heavy cream. Stir to combine and bring to a simmer. Let it cook for about 3-4 minutes, allowing it to reduce slightly.
  10. Stir in Parmesan: Lower the heat and add in the grated Parmesan cheese, stirring until melted and the sauce is creamy.
  11. Add Tortellini & Steak: Gently fold in the tortellini and seared steak into the creamy sauce. Toss everything together until the tortellini is well coated.
  12. Season and Mix: Taste, and adjust with additional salt and pepper if needed.
  13. Plating: Serve the Creamy Garlic Steak Tortellini in bowls, garnished with a sprinkle of fresh parsley.
