Garlic Steak Bites and Potatoes

A comforting and hearty dish of tender steak bites seared with garlic, paired with crispy baby potatoes.

  • lbs sirloin steak, cut into bite-sized cubes
  • lbs baby potatoes, halved or quartered
  • 4 tablespoons olive oil (divided)
  • 4 tablespoons butter
  • 56 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian herbs
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the potatoes: Start by washing your baby potatoes thoroughly. If you like them crispier, soak in cold water for about 30 minutes.
  2. Cook the potatoes: Boil salted water, add halved potatoes, and cook for 10–12 minutes until fork-tender. Drain and let cool.
  3. Sear the steak: Season steak with salt, pepper, and paprika. Heat 2 tablespoons olive oil in a skillet over medium-high heat and add the steak in batches.
  4. Brown the steak: Sear without moving for about 3–4 minutes until browned. Flip to brown all sides, then set aside.
  5. Sauté the garlic: In the same skillet, lower heat, add 2 tablespoons olive oil and butter, then minced garlic. Cook for about 30 seconds.
  6. Mix in the potatoes: Add drained potatoes to the skillet, stirring to coat in garlic-butter. Cook for 5–7 minutes until golden and crispy.
  7. Combine steak and herbs: Return seared steak to the skillet, add dried Italian herbs, salt, and pepper. Toss to meld flavors for 2-3 minutes.
  8. Finish with parsley: Stir in chopped parsley just before serving.

Notes

For a spicy kick, add red pepper flakes when cooking garlic. You can swap the steak for chicken or shrimp for a lighter version.
