Garlic Butter Steak Rigatoni

A creamy Garlic Butter Steak Rigatoni dish that combines al dente pasta with tender steak, rich garlic butter, and a luscious sauce – perfect for family gatherings.

  • 12 oz rigatoni
  • 1 lb sirloin or ribeye steak, cubed
  • 2 tbsp olive oil
  • 3 tbsp butter
  • 4 garlic cloves, minced
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • Salt, to taste
  • Black pepper, to taste
  • 2 tbsp chopped fresh parsley
  • Optional: sautéed mushrooms or spinach

Instructions

  1. Cook the Pasta. Bring a large pot of salted water to a boil, add rigatoni and cook until al dente. Reserve 1 cup of pasta water before draining.
  2. Sear the Steak. Heat a large skillet over medium-high heat with olive oil, add steak and sear for 2-3 minutes until browned, then flip and cook until desired doneness. Transfer to a plate and cover.
  3. Create the Garlic Butter Sauce. In the same skillet, melt butter, sauté garlic for 30 seconds, then add heavy cream and simmer until slightly thickened.
  4. Add the Cheese and Steak. Stir in Parmesan until melted, then return steak and rigatoni to pan, tossing to coat in sauce.
  5. Finish with Fresh Herbs. Sprinkle with parsley, adjust seasoning, and serve with grated Parmesan.

Notes

For a lighter option, substitute heavy cream with half-and-half or coconut cream. You can also make it gluten-free by using gluten-free pasta.
