  • 3/4 cup almond butter
  • 1/2 cup pure maple syrup
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1 tbsp freshly grated ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground cloves
  • 1/4 tsp salt
  • 1 tsp baking soda

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the sweet potatoes: Peel and cube them, boil until tender, drain, and mash.
  3. Mix the wet ingredients: Combine mashed sweet potatoes, almond butter, maple syrup, eggs, and vanilla extract in a bowl, whisk until smooth.
  4. Incorporate the dry ingredients: Add grated ginger, cinnamon, nutmeg, cloves, salt, and baking soda to the mixture.
  5. Transfer the batter to a greased and lined 8-inch cake pan.
  6. Bake for 30-35 minutes until a toothpick comes out clean.
  7. Cool for 10 minutes in the pan, then transfer to a wire rack to cool completely.
