Flourless Oatmeal Carrot Cake

A healthy and gluten-free take on a classic dessert, this Flourless Oatmeal Carrot Cake is packed with wholesome ingredients and delightful spices.

Ingredients

  • 2 cups rolled oats
  • 2 cups grated carrots
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1/2 cup almond milk (or any milk of choice)
  • 3 medium eggs
  • 1 teaspoon vanilla extract
  • 2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • Optional: Chopped nuts or raisins

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare a 9-inch round cake pan by lightly greasing it or lining it with parchment paper.
  3. Mix the rolled oats, baking powder, cinnamon, nutmeg, and salt in a large mixing bowl.
  4. Combine the grated carrots, honey (or maple syrup), melted coconut oil, almond milk, eggs, and vanilla extract in another bowl.
  5. Incorporate the dry mixture into the wet ingredients and stir gently until just combined.
  6. Pour the batter into your prepared cake pan and smooth the top with a spatula.
  7. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool the cake in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  9. Slice and enjoy, optionally topped with honey or whipped cream.

Notes

For a chocolatey twist, add 1/4 cup cocoa powder to the dry ingredients. To make it vegan, replace eggs with unsweetened applesauce.
