Easy No-Bake Peanut Butter Oat Cups

Delightful no-bake oat cups packed with rich peanut butter flavor, chewy oats, and a hint of sweetness, perfect for snacking or dessert.

Ingredients

  • 1 ½ cups Old-fashioned rolled oats
  • ½ cup Peanut butter (creamy or crunchy)
  • ¼ cup Honey or maple syrup
  • 2 tablespoons Coconut oil
  • ½ cup Chocolate chips
  • Pinch of salt

Instructions

  1. Prep your muffin tin by lightly greasing it or lining with muffin liners.
  2. Combine the oats, coconut oil, and pinch of salt in a large bowl, stirring well.
  3. Add the peanut butter, microwaving it if stiff, and mix until fully incorporated.
  4. Pour in the honey (or maple syrup) and mix until combined.
  5. Fold in the chocolate chips.
  6. Scoop the mixture evenly into the muffin tin, pressing down firmly.
  7. Chill the muffin tin in the fridge for at least 30 minutes to set.
  8. Unmold the cups by running a knife around the edges and popping them out.
