Easy & Irresistible Healthy Oatmeal Carrot Cake

A delightful and healthy twist on traditional carrot cake, packed with wholesome ingredients and perfect for breakfast or dessert.

  • 2 cups rolled oats
  • 1 cup grated carrots
  • 1/2 cup applesauce
  • 1/4 cup honey or maple syrup
  • 1/2 cup almond milk (or any milk of choice)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/4 cup raisins (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prep your 9×9 baking dish by lightly greasing it or lining it with parchment paper.
  3. Mix the dry ingredients in a large bowl: rolled oats, baking powder, cinnamon, and salt.
  4. Combine the wet ingredients in another bowl: grated carrots, applesauce, honey (or maple syrup), almond milk, and vanilla extract.
  5. Pour the wet mixture into the dry ingredients, gently folding until just combined.
  6. Add optional ingredients like walnuts or raisins, folding them in gently.
  7. Spread the batter evenly in your prepared baking dish.
  8. Bake for 25-30 minutes until the edges are golden and a toothpick comes out clean.
  9. Cool in the pan for 10 minutes before transferring to a wire rack.
  10. Slice into squares and serve as is or topped with Greek yogurt or maple syrup.

Notes

For a vegan version, use maple syrup instead of honey. Feel free to customize with chocolate chips or coconut.
