Delicious Chicken Enchiladas

Flavor-packed chicken enchiladas filled with tender chicken and topped with cheese and enchilada sauce, perfect for a comforting meal.

  • 2 cups Cooked and Shredded Chicken
  • 1 can Red Enchilada Sauce (10 oz)
  • 2 cups Shredded Monterey Jack Cheese
  • 8 pieces Flour Tortillas
  • 1 tablespoon Vegetable Oil
  • 1 small Onion, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili Powder
  • Salt and Pepper to taste
  • Chopped Cilantro (for garnish)
  • Sour Cream (for serving)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Sauté the chopped onion in vegetable oil for about 5 minutes until soft, then add minced garlic and sauté for 1-2 more minutes.
  3. Mix the sautéed onions and garlic with chicken, 1 cup of cheddar cheese, cumin, chili powder, salt, and pepper in a large bowl.
  4. Prepare tortillas by warming them in the microwave for 15-20 seconds if needed.
  5. Assemble the enchiladas by placing 1/4 cup of the chicken mixture in the center of each tortilla, rolling tightly, and placing seam-side down in a baking dish.
  6. Add red enchilada sauce over the top of the rolled enchiladas.
  7. Sprinkle remaining Monterey Jack cheese on top.
  8. Bake for 20 minutes covered with foil, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly.
  9. Garnish with cilantro and serve with sour cream.

Notes

Feel free to customize the filling or add spices according to your taste. These enchiladas can be made ahead of time and are fantastic for leftovers.
