Dairy-Free Chicken Alfredo

A creamy and comforting Dairy-Free Chicken Alfredo that’s perfect for a quick weeknight dinner or an impressive gathering.

  • 1 1/4 lbs Chicken breast (diced small)
  • 1 3/4 tsp Sweet Smoked Paprika
  • 1 1/2 tsp Oregano
  • 1 1/2 tsp Garlic Powder
  • 1/2 tsp Thyme
  • 1/2 tsp Black Pepper
  • 1/2 tsp Salt
  • 12 oz Gluten-Free Farfalle
  • 4 tbsp Dairy-Free Butter
  • 2 tbsp Minced Onion
  • 2 tsp Italian Seasoning
  • 1 tsp Garlic Powder
  • 1/2 tsp Salt
  • 2 cups Chicken Broth
  • 1 2/3 tbsp Gluten-Free 1:1 Flour
  • 2 cups Dairy-Free Heavy Cream
  • 2 cups Chopped Spinach
  • 8 oz Dairy-Free Parmesan (shredded)
  • 2 tbsp Pasta Water (as needed)

Instructions

  1. Cook the Pasta: Start by bringing a large pot of salted water to a boil. Add the gluten-free farfalle and cook according to the package instructions, usually about 8-10 minutes.
  2. Season the Chicken: While the pasta is cooking, in a large skillet, combine the diced chicken with sweet smoked paprika, oregano, garlic powder, thyme, black pepper, and salt. Mix it well to coat.
  3. Sauté the Chicken: Heat 2 tablespoons of dairy-free butter in the skillet over medium-high heat. When melted, add the seasoned chicken. Cook until golden brown and cooked through, about 6-8 minutes.
  4. Add Onion & Garlic to the Pan: Once the chicken is cooked, reduce the heat to medium and add minced onion. Sauté until softened, about 3 minutes. Stir in another teaspoon of garlic powder.
  5. Make the Sauce: Sprinkle gluten-free flour over the onion and chicken mixture, mixing well until the flour is cooked, about 1 minute. Gradually pour in the chicken broth while stirring.
  6. Cream it Up: Now add the dairy-free heavy cream along with Italian seasoning and additional salt to taste. Stir everything together, letting it simmer gently for about 5 minutes.
  7. Toss in Spinach and Cheese: Stir in the chopped spinach and shredded dairy-free parmesan cheese. Let it cook for another 2-3 minutes.
  8. Combine with Pasta: Add the cooked and drained pasta to the skillet with the creamy sauce. Toss everything together until the pasta is well-coated.
  9. Final Touches: Taste and adjust the seasoning if needed. Add another sprinkle of dairy-free parmesan and a twist of black pepper to finish!

Notes

Serve hot, garnished with fresh herbs or more dairy-free parmesan. Pair with a Caesar salad or garlic bread.
