Creamy Veggies with Herb Rice

A comforting meal combining colorful vegetables in a creamy sauce, served with herb-infused Arborio rice.

  • 1 cup Arborio rice
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers (any color), diced
  • 1 cup broccoli florets
  • 1 cup heavy cream
  • 1 teaspoon dried Italian herbs
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Prepare the Rice: Rinse your Arborio rice under cold water until the water runs clear. In a medium pot, combine the rinsed rice and 2 cups of vegetable broth. Bring it to a boil, then reduce to a simmer and cover. Let it cook for about 18-20 minutes until the liquid is absorbed. Fluff with a fork before serving.
  2. Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add in the diced onion and cook until it’s translucent, about 5 minutes. Stir occasionally to ensure even cooking. Add the minced garlic and cook for an additional minute.
  3. Add the Veggies: Toss in the diced bell peppers and broccoli florets. Sauté for about 5-7 minutes until the veggies are tender but still vibrant.
  4. Create the Creamy Sauce: Lower the heat and pour in the heavy cream. Add the dried Italian herbs, salt, and pepper. Stir gently to combine, allowing the cream to warm through, about 2-3 minutes.
  5. Combine with the Rice: Add the cooked rice to the skillet, mixing everything together until the rice is well-coated with the creamy mixture.
  6. Garnish and Serve: Just before serving, sprinkle with fresh parsley for a pop of color and freshness.

Notes

Experiment with different veggies or proteins for variety. Ensure not to overcook the vegetables for optimal texture.
