Creamy Salmon Pasta

A luscious creamy salmon pasta that captures the essence of comfort food, perfect for a weeknight dinner.

  • 2 Salmon Fillets
  • 8 oz Pasta (Penne or Fettuccine)
  • 2 Cups Fresh Spinach
  • 1 Cup Heavy Cream
  • 2 Cloves Garlic, minced
  • 2 Tablespoons Olive Oil
  • Salt and Pepper to taste
  • Parmesan cheese, for garnish

Instructions

  1. Cook the Pasta: Start by boiling a large pot of salted water. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of pasta water, then drain.
  2. Sauté the Salmon: In the same pot, add olive oil over medium heat. Season salmon with salt and pepper, and sear for 4-5 minutes on each side until cooked through. Remove and let rest.
  3. Create the Garlic Base: Sauté minced garlic in the same pot for 1-2 minutes until fragrant. Add spinach and let it wilt.
  4. Add the Cream: Pour in the heavy cream while stirring, allowing it to bubble gently and thicken slightly.
  5. Incorporate the Pasta: Fold the drained pasta into the cream sauce and add a splash of reserved pasta water if needed.
  6. Flake the Salmon: Gently flake the salmon into bite-sized pieces and fold it into the pasta mixture.
  7. Plate It Up: Serve in bowls and garnish with freshly grated Parmesan cheese and a sprinkle of black pepper.
