Creamy Pesto Chicken Pasta Bake

  • 12 oz penne pasta
  • 2 cups cooked chicken, shredded
  • 1 cup pesto sauce
  • 1 cup sour cream
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the pasta according to package instructions until al dente.
  3. Combine the shredded chicken, pesto, and sour cream in a large bowl.
  4. Add the drained pasta to the chicken mixture and toss until well combined.
  5. Fold in half of the mozzarella and Parmesan cheese, plus the cherry tomatoes if using.
  6. Grease a 9×13-inch baking dish with olive oil and pour the pasta mixture into the dish.
  7. Top with the remaining mozzarella and Parmesan cheese.
  8. Bake covered with foil for 20 minutes, then remove the foil and bake for an additional 10-15 minutes until bubbly and golden brown.
  9. Cool for a few minutes before serving.

Notes

For a vegetarian option, replace chicken with sautéed vegetables like mushrooms or zucchini.
