Creamy Garlic Chicken Potatoes

A hearty dish that combines tender chicken and creamy garlic sauce with perfectly roasted baby potatoes. Perfect for weeknight dinners and family gatherings.

  • 4 boneless (skinless chicken breasts)
  • Salt (to taste)
  • Black pepper (to taste)
  • 2 teaspoons garlic powder (divided)
  • 4 cloves garlic (minced)
  • 3 tablespoons olive oil (divided)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley (chopped, optional)
  • 1.5 pounds baby potatoes (halved)
  • 1 teaspoon dried rosemary or thyme

Instructions

  1. Prep your ingredients: Preheat your oven to 400°F (200°C). Wash and halve the baby potatoes. Toss them in a bowl with 1 tablespoon of olive oil, salt, and black pepper. Spread on a baking sheet.
  2. Roast the potatoes: Place in the oven and roast for about 25-30 minutes until golden brown and fork-tender.
  3. Sear the chicken: Heat 2 tablespoons olive oil in a skillet over medium-high heat. Season chicken with salt, pepper, and 1 teaspoon garlic powder. Sear for about 4-5 minutes on each side until cooked through.
  4. Make the garlic sauce: Add minced garlic to the skillet and sauté for 30 seconds. Pour in chicken broth, then add heavy cream, remaining garlic powder, Dijon mustard, Italian seasoning, rosemary, and Parmesan cheese. Simmer for 3-4 minutes until thickened.
  5. Combine and cook: Add the chicken back to the skillet, spooning sauce over it. Cook on low heat for 5 minutes.
  6. Finish with potatoes: Serve roasted potatoes alongside the chicken, drizzling extra sauce on top and optionally sprinkling with chopped parsley.

Notes

Customize this dish by adding lemon for a citrus twist, sautéing mushrooms for an earthy flavor, or spice it up with red pepper flakes.
