Creamy Garlic Chicken and Potatoes

Tender chicken and buttery potatoes smothered in a luscious garlic cream sauce, perfect for weeknight dinners or special gatherings.

  • 4 boneless, skinless chicken breasts
  • Salt and black pepper (to taste)
  • 2 teaspoons garlic powder (divided)
  • 4 cloves garlic (minced)
  • 3 tablespoons olive oil (divided)
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Italian seasoning
  • 1 tablespoon fresh parsley (chopped, optional)
  • 1.5 pounds baby potatoes (halved)
  • 1 teaspoon dried rosemary or thyme

Instructions

  1. Prep your chicken by seasoning the breasts with salt, pepper, and 1 teaspoon of garlic powder.
  2. Sauté the baby potatoes in 1 tablespoon of olive oil over medium heat for about 10 minutes, until golden.
  3. Cook the chicken breasts for about 6-7 minutes on each side until golden and cooked through.
  4. Make the creamy sauce by sautéing minced garlic in the same pan, then adding chicken broth and the remaining garlic powder.
  5. Bring the sauce together by adding heavy cream, Parmesan cheese, Dijon mustard, and Italian seasoning. Simmer until thickened.
  6. Combine the chicken and potatoes in the sauce, allowing them to simmer for another 5-7 minutes over low heat.
  7. Garnish with freshly chopped parsley and serve hot.
