  • 1 lb boneless, skinless chicken breasts
  • 1 can coconut milk
  • 1 tbsp soy sauce (or tamari)
  • 1 tsp lime juice
  • 2 cloves garlic
  • 1 tsp ginger
  • 2 cups cooked rice
  • 1 tbsp vegetable oil (or coconut oil)
  • Salt and pepper to taste
  • Fresh cilantro or green onions (for garnish)

Instructions

  1. Prepare the chicken by patting it dry and seasoning with salt and pepper.
  2. Sear the chicken in a skillet over medium-high heat for about 5–7 minutes on each side.
  3. Create the flavor base by sautéing garlic and ginger in the same skillet.
  4. Mix in coconut milk and soy sauce, then let simmer for a couple of minutes.
  5. Return the chicken to the skillet and let it simmer in the coconut sauce for about 5 minutes.
  6. Finish with fresh lime juice to brighten the dish.
  7. Serve the coconut chicken over cooked rice.
  8. Garnish with fresh cilantro or green onions before enjoying.

Notes

For a lighter dish, consider using light coconut milk or substitute rice with cauliflower rice. This recipe is versatile; feel free to add veggies or make it spicy with jalapeños.
