Cinnamon Roll Cheesecake Cookies

  • 1 cup Granulated Sugar
  • 1 cup Brown Sugar
  • 2 Eggs (Large)
  • 1 teaspoon Vanilla Extract
  • 3 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
  • 1 teaspoon Ground Cinnamon
  • 8 oz Cream Cheese (Softened)
  • 0.5 cup Powdered Sugar
  • 1 tablespoon Milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare your baking sheets with parchment paper or silicone mats.
  3. Make the cookie dough: Cream together the softened unsalted butter, granulated sugar, and brown sugar until light and fluffy. Add in the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and stir.
  4. Mix dry ingredients in a separate bowl: Whisk together the all-purpose flour, baking soda, salt, and ground cinnamon.
  5. Combine wet and dry mixtures while mixing on low speed until just combined.
  6. Prepare the cream cheese filling by beating together the softened cream cheese, powdered sugar, and milk until smooth.
  7. Form the cookies by taking a tablespoon of cookie dough, flattening it slightly, filling it with cream cheese mixture, and sealing it in the dough.
  8. Bake for 10-12 minutes until edges are lightly golden.
  9. Cool on baking sheets for 5 minutes before transferring to a wire rack.
  10. Serve warm or allow to cool completely, dusting with powdered sugar if desired.
