Chicken Sausage Orzo Bake

A comforting one-pan dish featuring chicken sausage, orzo pasta, cherry tomatoes, and creamy feta.

  • 2 cups orzo pasta
  • 1 lb chicken sausage, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup spinach
  • 1 cup feta cheese, crumbled
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 1 teaspoon Italian seasoning
  • 4 cups water or chicken broth

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cook the sausage in olive oil over medium heat for about 5-7 minutes, until browned.
  3. Add the minced garlic and cherry tomatoes, cooking for an additional 2-3 minutes.
  4. Stir in the orzo and spinach until well mixed.
  5. Pour in the water or chicken broth and bring to a gentle simmer.
  6. Season with Italian seasoning, salt, and pepper to taste.
  7. Mix in the crumbled feta and half of the shredded cheddar cheese.
  8. Bake in the oven for about 20-25 minutes or until the orzo is fully cooked.
  9. Finish with the remaining cheddar cheese and bake for an additional 5 minutes.
  10. Garnish with fresh herbs before serving.
