Savory Chicken Lo Mein

A flavorful Chicken Lo Mein recipe that brings the warmth of home-cooked meals to your table.

  • 34 boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 carrots (thinly sliced)
  • 2 green onions (chopped)
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
  • 3 cloves fresh minced garlic

Instructions

  1. Cook the Noodles: Start by bringing a large pot of water to a boil. Once it’s bubbling, add in the Lo Mein noodles and cook them according to the package instructions until they’re al dente. Drain and rinse with cold water to stop the cooking process. Toss in a drizzle of sesame oil to keep them from sticking together.
  2. Prep the Chicken: While the noodles are cooking, slice the chicken breasts into thin strips — about 1-inch pieces. Season with a pinch of salt and pepper.
  3. Sauté the Chicken: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat. Once hot, add the sliced chicken in a single layer. Let them sear for about 3-4 minutes until they start to brown. Once browned, stir and cook for another 2-3 minutes until fully cooked through.
  4. Add the Veggies: Toss in the minced garlic right after the chicken is done, and give it about 30 seconds to get fragrant. Next, add the sliced bell peppers and carrots. Stir-fry these veggies for about 3-4 minutes, just until they’re tender yet still crunchy.
  5. Combine Everything: Add your drained Lo Mein noodles into the skillet, followed by the soy sauce. Keep the heat up and continue to stir until all the noodles are well coated and everything is heated through.
  6. Finish it Off: Toss in the chopped green onions, then give everything one last stir. Drizzling a little more sesame oil on top adds fragrant finish.
