Chicken Garlic Parmesan Pasta

A comforting family favorite featuring tender chicken in a creamy garlic Parmesan sauce with gluten-free farfalle pasta.

  • 2 tbsp olive oil
  • 1 ½ lb Springer Mountain Farms chicken breast
  • 1 ½ tsp paprika
  • 1 ½ tsp oregano
  • 1 tsp garlic powder
  • ½ tsp thyme
  • ½ tsp black pepper
  • ½ tsp salt
  • 12 oz gluten-free farfalle pasta
  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • ½ cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded Parmesan
  • ¼ cup pasta water
  • ½ tsp salt
  • 1 tsp garlic powder (additional)

Instructions

  1. Boil the Pasta Water: Start by bringing a large pot of salted water to a boil.
  2. Cook the Pasta: Add your gluten-free farfalle pasta and cook according to the package instructions until al dente.
  3. Reserve Pasta Water: Just before draining the pasta, save about ¼ cup of that starchy pasta water.
  4. Drain & Set Aside: Drain the pasta and set it aside while you whip up the sauce.
  5. Heat Olive Oil: In a large skillet, heat the olive oil over medium heat.
  6. Season & Cook Chicken: Season the chicken breasts with spices and cook for about 6-7 minutes on each side until golden brown.
  7. Remove Chicken: Transfer the chicken to a plate and let it rest before slicing into bite-sized pieces.
  8. Melt Butter & Shallots: In the same skillet, melt the butter and sauté the shallots until fragrant.
  9. Add Flour: Sprinkle in the gluten-free flour and stir to combine, forming a roux.
  10. Pour in Broth & Cream: Gradually pour in the chicken broth and then the heavy cream, stirring continuously.
  11. Season with Italian Spice: Add the Italian seasoning and a pinch of salt; let the sauce simmer until thickened.
  12. Stir in Parmesan: Mix in the shredded Parmesan cheese until melted.
  13. Return the Chicken: Toss the sliced chicken back into the skillet.
  14. Add Pasta: Gently fold the cooked pasta into the creamy mixture, adding a splash of reserved pasta water.
  15. Taste Test: Adjust seasoning if needed.
  16. Plate Up: Serve with fresh chopped parsley and a lemon wedge if desired.
