Cheesy Potato Egg Scramble

A comforting breakfast dish combining crispy potatoes, fluffy scrambled eggs, and melted cheddar cheese.

  • 2 cups diced potatoes (russet, Yukon gold, or sweet potatoes)
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced ham or bacon (optional)
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish (optional)

Instructions

  1. Dice your potatoes into small cubes, about ½ inch in size.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Cook the potatoes for about 10-15 minutes until golden brown and crispy.
  4. Add the ham or bacon if using, and sauté until heated through.
  5. Beat the eggs in a bowl and add a dash of salt and pepper.
  6. Pour the eggs into the skillet, scrambling gently as they begin to cook.
  7. Combine the eggs with the potato mixture as they set.
  8. Add the shredded cheddar cheese and let it melt before serving.
  9. Serve hot, garnished with green onions if desired.
