Carrot Cake Energy Balls

Delicious and nutritious carrot cake energy balls packed with flavor and energy, perfect for a quick snack or a midday pick-me-up.

Ingredients

  • 1 cup medjool dates (pits removed)
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • Extra 1/2 cup shredded coconut for rolling

Instructions

  1. Prep all your ingredients. Make sure the medjool dates are pitted.
  2. Blend the pitted medjool dates in a food processor until they form a sticky paste.
  3. Add the shredded carrots, walnuts, chia seeds, shredded coconut, cinnamon, nutmeg, and a pinch of salt to the food processor.
  4. Incorporate the vanilla extract while the processor is running until the mixture clumps together.
  5. Form tablespoon-sized balls with clean hands.
  6. Roll the energy balls in the extra shredded coconut.
  7. Chill in the fridge for about 30 minutes on a baking sheet lined with parchment paper.

Notes

These energy balls can be stored in an airtight container in the fridge for up to two weeks or frozen for up to three months.
