Carrot Cake Energy Balls

Delicious no-bake energy balls inspired by carrot cake, packed with wholesome ingredients for a nutritious snack.

  • 1 cup Medjool dates, pitted
  • 1/3 cup shredded carrots
  • 1 cup walnuts
  • 1 tbsp chia seeds
  • 1/3 cup shredded unsweetened coconut
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • Pinch of salt
  • 1 tsp vanilla extract
  • 1/2 cup extra shredded coconut for rolling

Instructions

  1. Prepare your dates by soaking them in warm water for about 10 minutes if they are firm.
  2. Blend the soaked dates, shredded carrots, walnuts, chia seeds, shredded coconut, cinnamon, nutmeg, and salt in a food processor until finely chopped and sticky.
  3. Add the vanilla extract and pulse again until well combined.
  4. Chill the mixture in the refrigerator for about 30 minutes.
  5. Shape about a tablespoon of the mixture into bite-sized balls.
  6. Roll each ball in the extra shredded coconut for a finishing touch.
  7. Store in an airtight container in the fridge for up to a week.
