Carrot Cake Energy Balls

A sweet, nutritious treat that captures the essence of carrot cake in a convenient, no-bake form.

  • 1 cup walnuts
  • 1 cup shredded carrots
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup rolled oats
  • 1/4 cup maple syrup (optional)
  • Pinch of salt

Instructions

  1. Prep your ingredients by chopping the pitted dates into smaller chunks.
  2. Add the dates, walnuts, shredded carrots, cinnamon, nutmeg, rolled oats, and pinch of salt into your food processor.
  3. Taste the mixture and adjust sweetness with maple syrup if desired.
  4. Form small portions of the mixture into bite-sized balls, about 1 inch in diameter.
  5. Chill the energy balls on a baking sheet lined with parchment paper for about 30 minutes.

Notes

Roll the balls in shredded coconut or crushed nuts for an extra touch. These energy balls can last up to a week in the fridge.
