Instructions

  1. Marinate the chicken: In a medium bowl, combine the buttermilk and Cajun seasoning. Add the chicken breasts, ensuring they are fully submerged. Cover and refrigerate for at least 1 hour.
  2. Prepare the coating: In a shallow dish, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.
  3. Heat the oil: In a large skillet, heat about 1-2 inches of vegetable oil over medium-high heat.
  4. Coat the chicken: Take the marinated chicken out of the buttermilk and dredge each piece in the flour mixture, pressing firmly to create a thick coating.
  5. Fry the chicken: Carefully add the coated chicken to the hot oil, frying for 4-6 minutes on each side until golden brown and cooked through.
  6. Drain and rest: Transfer the chicken to a paper towel-lined plate to drain excess oil.
  7. Make the garlic aioli: In a small bowl, combine mayonnaise, minced garlic, lemon juice, salt, and black pepper.
  8. Assemble the sandwich: Take a toasted brioche bun and add a generous dollop of garlic aioli, followed by the crispy chicken, romaine leaves, and sliced tomato.
