Cowboy Butter Chicken Pasta

A hearty and flavorful creamy pasta dish featuring tender chicken and rich buttery sauce, perfect for any weeknight dinner or special gathering.

  • 12 ounces pasta of your choice
  • 1 pound boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 medium onion, diced
  • 1 cup heavy cream
  • 1 cup low-sodium chicken broth
  • 1 cup grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Cook the pasta in a large pot of salted boiling water until al dente, reserving 1 cup of pasta water before draining.
  2. Sauté the chicken in a large skillet with 2 tablespoons of butter until golden brown and cooked through, about 5-7 minutes.
  3. Create the flavor base by adding remaining butter, diced onion, and minced garlic to the skillet, sautéing until fragrant.
  4. Build the sauce by adding chicken broth and simmering, then stir in heavy cream, Italian seasoning, and red pepper flakes, simmering for 5 minutes.
  5. Combine cooked chicken and pasta into the sauce, stirring to coat, and add reserved pasta water to reach desired consistency.
  6. Serve topped with grated Parmesan and freshly chopped parsley.

Notes

Consider using whole wheat or gluten-free pasta for variations. Adjust red pepper flakes to taste for spice preference.
