Cowboy Butter Chicken Pasta

A creamy and flavorful pasta dish that brings together chicken and a buttery sauce, perfect for weeknight dinners and special occasions alike.

  • 12 ounces Pasta of your choice
  • 1 pound Chicken breast, boneless and skinless, cut into bite-sized pieces
  • 4 tablespoons Unsalted butter
  • 4 cloves Garlic, minced
  • 1 medium Onion, diced
  • 1 cup Heavy cream
  • 1 cup Chicken broth
  • 1 cup Grated Parmesan cheese
  • 1 tablespoon Italian seasoning
  • 1 teaspoon Red pepper flakes
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare the pasta according to package instructions until al dente, reserving a cup of the cooking water before draining.
  2. Sauté the chicken in a large skillet over medium heat with 4 tablespoons of butter until golden brown, then set aside.
  3. Cook the diced onion in the same skillet for 3-5 minutes until translucent, then add the minced garlic and cook for 1-2 minutes.
  4. Create the sauce by adding heavy cream and chicken broth, stirring in Italian seasoning and red pepper flakes, and allowing it to simmer for 4-5 minutes.
  5. Add the cooked chicken back into the skillet and mix in the reserved pasta water to reach desired consistency.
  6. Incorporate the drained pasta into the skillet, mixing well with the creamy sauce and melted Parmesan cheese.
  7. Taste and adjust seasoning with salt, pepper, or red pepper flakes as needed.

Notes

Feel free to substitute chicken for mushrooms or roasted vegetables for a vegetarian option. This dish can also be frozen for later enjoyment.
