  • 4 slices of bacon
  • 4 eggs

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the sweet potatoes by scrubbing, drying, and piercing them with a fork.
  3. Roast the sweet potatoes in the oven for about 40-45 minutes, or until fork-tender.
  4. Cook the bacon in a skillet over medium heat until crispy, about 5-7 minutes.
  5. Cook the eggs sunny-side up in the skillet for 2-3 minutes.
  6. Assemble the dish by slicing the roasted sweet potatoes and mashing them slightly.
