  • 1/2 cup erythritol (or other sugar substitute)
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a loaf pan (9×5 inches) with butter or line with parchment paper.
  3. Combine the almond flour, erythritol, baking powder, and salt in a large mixing bowl.
  4. Whisk together the eggs, melted butter, lemon juice, lemon zest, and vanilla extract in another bowl.
  5. Pour the wet mixture into the dry ingredients and gently fold together until just combined.
  6. Transfer the batter into your prepared loaf pan.
  7. Bake for 40-45 minutes or until a toothpick comes out clean.
  8. Cool the loaf in the pan for 10-15 minutes before transferring to a wire rack.
