Beef and Cheese Chimichangas

Crispy, golden envelopes filled with a flavorful mixture of beef, beans, and cheese, perfect for any gathering or a cozy night in at home.

  • 1 lb ground beef
  • 1 small onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 packet (1 oz) taco seasoning
  • ½ cup salsa
  • 1 cup refried beans
  • 1 ½ cups shredded cheddar cheese (or Mexican blend)
  • 6 large flour tortillas (burrito-size)
  • 2 tbsp vegetable oil (for brushing/frying)

Instructions

  1. Prep Your Ingredients: Gather all your ingredients. Chop your onion, mince your garlic, and shred your cheese if you haven’t done so yet.
  2. Cook the Beef Mixture: In a large skillet over medium-high heat, add in the ground beef. Break it up with a spatula and cook until browned, about 5–7 minutes.
  3. Add Onions and Garlic: Once the beef is nicely browned, add in the diced onion and sauté it for about 2 minutes. Then, toss in the minced garlic.
  4. Season and Combine: Sprinkle in that taco seasoning and add the salsa. Stir well, then mix in the refried beans and shredded cheese. Cook for about 2–3 minutes.
  5. Heat the Tortillas: Warm the flour tortillas in a dry skillet or microwave for about 20 seconds.
  6. Fill and Roll: Take a tortilla and spoon a generous amount of the beef mixture onto the center. Fold the sides in and roll it up tightly.
  7. Fry or Bake: Heat about 2 tablespoons of vegetable oil in a skillet over medium heat. Fry each chimichanga for about 3–4 minutes on each side until golden brown, or brush and bake at 400°F (200°C) for 20 minutes.
  8. Serve with Style: Transfer to a plate and top with salsa, guacamole, and sour cream. Enjoy!

Notes

Chimichangas can be prepared ahead of time, and they freeze well. To make them extra crispy, fry in hot oil instead of baking.
