  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup panko breadcrumbs
  • 1 tbsp olive oil or spray for crisping
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to spice level)
  • 1 tsp honey (optional)
  • Juice of ½ lime
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Prepare the salmon by patting it dry and seasoning with garlic powder, smoked paprika, salt, and pepper.
  2. Preheat your oven to 400°F (200°C).
  3. Bread the salmon bites by dipping each in panko breadcrumbs, ensuring they are fully coated.
  4. Give them a spritz or drizzle with olive oil.
  5. Bake in the oven for 12-15 minutes until crispy and cooked through.
  6. Mix the bang bang sauce in a bowl combining mayonnaise, sweet chili sauce, sriracha, honey, and lime juice.
  7. Assemble the dish by placing rice on plates, topping with salmon bites, and drizzling with sauce.
  8. Garnish with fresh cilantro and sesame seeds before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days and reheat in the oven to maintain crispiness.
