  • 1½ cups mashed bananas (approx. 3 bananas)
  • ½ cup nut butter (peanut, almond, or cashew)
  • 2 cups rolled oats
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • 3 tablespoons maple syrup
  • 1 cup chocolate chips
  • ½ teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare an 8×8-inch or 9×9-inch baking dish by greasing it lightly or lining it with parchment paper.
  3. Mash the ripe bananas in a large mixing bowl until smooth.
  4. Add the nut butter and maple syrup, mixing well until combined.
  5. Stir in the rolled oats, cinnamon, vanilla extract, and salt until everything is mixed.
  6. Pour the mixture into the prepared baking dish and sprinkle with remaining chocolate chips on top.
  7. Bake for 25-30 minutes, until lightly golden and a toothpick comes out clean.
  8. Cool for 10 minutes in the pan before transferring to a wire rack to cool completely and then slice into squares.

Notes

These bars can be served warm, with honey or yogurt, and can be stored in an airtight container for future snacks.
