Baked Cod in Coconut Lemon Cream Sauce

A quick and elegant dish featuring tender cod fillets baked in a rich coconut lemon cream sauce, perfect for busy weeknights.

  • 4 fillets Cod (thick, white cod fillets)
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Olive Oil
  • 1 medium Onion
  • 2 cloves Garlic (minced)
  • 1 tablespoon Ginger (grated)
  • 1 can Coconut Milk (full-fat preferred)
  • 3 tablespoons Lemon Juice (freshly squeezed)
  • 1 teaspoon Lemon Zest

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare your onion, garlic, and ginger by slicing and mincing them.
  3. Sauté the onion in olive oil over medium heat until translucent (about 3-5 minutes). Add the garlic and ginger, cooking for another minute.
  4. Build the sauce by adding coconut milk, lemon juice, lemon zest, salt, and pepper. Let it simmer for about 2-3 minutes.
  5. Add the cod fillets on top of the sauce.
  6. Bake for 15-20 minutes until the cod is flaky.
  7. Serve with chopped fresh herbs on top.

Notes

Serve with fluffy jasmine rice or quinoa and a green salad for a well-rounded meal.
